After much anticipation from Quinnipiac University students, Chief Experience Officer Tom Ellett announced, in an email Friday afternoon, that construction for a new All You Care To Eat (AYCTE) dining facility will begin this summer.
The dining facility is set to open in Fall 2027. The AYCTE facility will be housed in the former location of the university bookstore in the Carl Hansen Student Center.
The location will create “a vibrant and accessible hub for gathering, dining and connection,” according to Ellett.
This expansion will also come with a hybrid model of dining plans to be introduced in Fall 2027 as well. No other details regarding the hybrid model are available yet.
The space that housed the former bookstore has been closed off for the entirety of the 2025-26 school year, sparking curiosity among students for what was to come.
The AYCTE area will “continue to provide a wide variety of meal choices to meet the diverse needs and preferences of our students,” Ellett wrote.
Ellett also notes that students will continue to play a large role in shaping menus as student menu makers currently do. He encourages any other students with that interest to participate in the bi-weekly meetings for the Dining Services Advisory Board.
“This forum provides an opportunity to share ideas, offer feedback and help guide the future of dining at Quinnipiac,” Ellett wrote.
